Bourbon-Glazed Ham with Oranges
SERVES 16 TO 20 ACTIVE 40 MIN. TOTAL 3 HOURS
A layer of citrus slices looks like a lacquered mosaic when the ham is removed from the oven. If you donât have a hinged V-rack insert that works in your Dutch oven, a rack can be improvised by lining the bottom of the pot with metal cookie cutters. For an edible rack, use a layer of root vegetables like carrots or potatoes to lift the ham off the bottom of the pot while it cooks. Recipes call for fully cooked hams to be heated to 140°F because it is the optimum temperature for bringing out the most flavor.
1 (13- to 14-lb.) fully cooked bone-in ham
½ cup (4 oz.) bourbon
2 cups orange preserves
â cup packed dark brown sugar
4 navel oranges (or 6 to 8 clementines), peeled and thinly sliced
1. Preheat oven to 350°F. Line a Dutch oven with aluminum foil. Lightly grease a large hinged V-rack; place on top of the foil. Score ham on all sides and place fat-side up on rack.
2. Stir together bourbon, preserves, and brown sugar in a bowl. Brush ham with 1 cup of the bourbon glaze. Arrange the orange (or clementine) slices on top of the ham, overlapping slightly. Brush with a bit of remaining glaze. Roast in the preheated oven for 1 hour, brushing with bourbon glaze after 30 minutes.
3. Remove ham from oven. Increase oven temperature to 400°F. Baste ham with additional bourbon glaze. Return to oven for 15 minutes. Remove from oven; brush with more glaze. Return to oven until a thermometer inserted in thickest portion of ham registers 140°F, 10 to 15 minutes. Remove from oven; rest 10 minutes. Slice and serve warm or at room temperature with any remaining bourbon glaze.
